Head chef Pierre joins Novotel Parramatta

NOVOTEL Sydney Parramatta has appointed Pierre Wong as Executive Chef overseeing Two Forks Restaurant, bar and conference kitchens.

Having attended Culinary School in New York and worked in fine dining restaurants around the world, from Canada to France, Pierre brings a wealth of experience to the hotel and has started plans to develop an exciting new menu.

Pierre has worked at some Sydney’s coolest restaurants including Four In Hand, Jimmy Liks and Garfish. He has been within the Accor network for more than five years at

Mercure Resort Gerringong, Mercure Sydney Hotel and Ibis Sydney Airport.

He is renowned for dishes that are big on flavour, drawing from his Chinese – Vietnamese heritage. Pierre is excited to be among the vibrant hustle and bustle of the

Parramatta CBD and to provide every foodie with an exceptional dining experience.

Pierre’s style can be defined as Neo – classical French/Mediterranean with global accents honed from his worldly travels to France, Canada and the United States.

He says his greatest culinary inspirations are not people but epiphany moments (in Aspen, Colorado; Rome, Italy; Callau, Peru).

“They taught me that you cannot judge things based on their appearance, the importance of simplicity, and that you can never predict what life has in store for you,” he said.

Pierre is excited to add this mantra to our food and beverage offering at Novotel Sydney Parramatta which is like a blank canvas for him and is looking forward to building the team and making a difference to the Parramatta business community.  

Pierre says he looks for seasonally driven menus that are focus on simplicity and balance. Plenty of inspiration has gone into creating his exciting new menu to be launched this month, March.

The fresh new flavors of Two Forks Restaurant compliment the recent refurbishment of Novotel Sydney Parramatta, which was formerly The Sebel hotel.

The recent multimillion dollar refurbishment includes modification of all 194 accommodation rooms, revamp of hotel’s entrance, restaurant and bar, plus the addition of a brand new steam room adjacent to the hotel’s revamped outdoor heated pool and spa area.
